Growing wheat the right way
99% of US wheat is grown with synthetic fertilizers and pesticides that kill soil life and contribute to climate change. Our farmers use regenerative practices that build healthy soils instead of depleting them. Plants grown in healthy farmland are more capable of fighting off pests (reducing the need for pesticides), can access more nutrients in the soil (reducing the need for synthetic fertilizers made from burning fossil fuels), and require less irrigation.
As a result, regeneratively grown crops tend to be more nutritious, toxin free, and flavorful. You can taste and feel the difference.
Making healthy, flavorful flour
Most pasta flour is stale, bleached, and heavily refined. All the good, flavorful, nutritious stuff is thrown away! That wastes up to 30% of the wheat and 40% of the nutrients. Our flour is freshly stone-ground by local millers in cold temperatures to keep maximum flavor and whole-grain nutrients intact. With minimal sifting and zero additives, our flour is high in fiber, lower in net carbs, and easier to digest.
Crafting with love
We first met at a regenerative farming program in Hudson Valley, NY. We quickly bonded over a love of pasta and a desire to help more parents put worry-free, nutritious meals on the table for their kids.
We've visited small-scale farms and millers around the US to learn what wheat varieties perform best on the field and in the kitchen. After testing dozens of recipes, grain varieties, and sourcing partners, we're excited to share our pasta with the world!
Our carefully developed grain blends bring out restaurant quality texture while incorporating the most flavorful, nutritious parts of the wheat. We extrude all our pasta through bronze dies for that extra porous surface, perfect for sauce to cling onto.
Our pasta is just flour + water. No additives, all real, nourishing food.
